Hi, I'm Fon owner of My Thai Chef Melford

‘I was raised by my adopted family since birth and I grew up in Pakchong, Nakhon

Ratchasima which is in the Northeast of Thailand. I started working in a restaurant in

Thailand at the age of 15 but pursued a career in the care industry when I moved to

England. After 6 years of living in Lancashire, I decided to relocate to the beautiful village of

Long Melford. I absolutely love living in such a picturesque Suffolk village.

At the age of 30, I met my biological mum who happened to own a famous Pad Thai

restaurant in Rayong called ‘Muai Pad Thai’. The restaurant is very popular amongst locals

and tourists, often serving over 2000 servings of Pad Thai on their busiest days!

This inspired me and I discovered my true passion was food and cooking. I found cooking

brought back cherished memories from my childhood of time spent in the kitchen with my

grandmother and only further fuelled the happiness I felt when creating delicious food.

In April 2021 my partner and I began cooking from home and offering a delivery service of

my authentic Thai dishes to those local to Long Melford. We were then invited to join in a

street party in the village with our dishes for the Queen’s Jubilee celebrations. From

there, lots of opportunities emerged and we were invited to do a pop up at the Suffolk Distillery.

This led to us ultimately investing in our food van which my partner converted into the van

you see us in today!

Our Thai food is characterised by its true freshness and authenticity. I only use the finest,

freshest ingredients and pay great attention to our presentation also. Although I may be a

little bit biased, our food is undeniably delicious! All of our dishes are created based on my

personal experiences in the kitchen with my grandmother and are an authentic experience

of Thai food including my mother’s unique Pad Thai recipe that comes directly from her

restaurant in Thailand.

We are ever growing and are still actively looking for pop up opportunities in and around
